Friendsgiving. The Pre-Thanksgiving experience that brings you and your friends together for a fantastic meal. Cooking for your closest friends is always an amazing time but it’s so difficult in college. We don’t always have kitchens or all the supplies required. However, it’s still possible to have a super fun and tasty Friendsgiving this holiday season. I’ve comprised a list or recipes that are simple, easy, and fun to do in most dorm room environments:
No Mixer Garlic Mashed Potatoes:
Steps to Make It
Step 1: Rinse the potatoes.
Step 2: Cut the potatoes in such a way that they make small squares. It is important that all the squares are roughly the same size, put them in a pot and fill it with water to just cover the top (not so much that it starts spilling all over the stovetop once it starts boiling).
Step 3: Let the potatoes boil until you can slide a fork in them and they feel kind of mushy. Drain them in a colander and throw them back in the pan. Add the big gob of butter. Let it melt a little.
Step 4: Throw some milk in and pull out the potato masher. This is the most fun part. START SMOOSHING. It will get mashed potato-y shockingly quickly. If it’s not creamy enough add some sour cream and keep mashing.
Step 5: The potatoes will have gotten kind of cold at this point, so you might want to put the pan back on the stove top to warm them up.
1 package/12 ounces cranberries (fresh or frozen)
1/3 cup sugar (brown, packed)
2/3 cup sugar (granulated)
1 cup orange juice
Optional: 1 teaspoon zest (orange)
Optional: 1 dash cinnamon
Steps to Make It
Step 1: Rinse and pick the cranberries over, discarding damaged berries; set aside.
Step 2: In a medium saucepan over high heat, bring the sugars and orange juice to a boil and cook, stirring, until sugars are dissolved.
Step 3: Add the cranberries and orange zest or cinnamon and bring back to a boil.
Step 4: Reduce heat to low and simmer for 10 to 12 minutes, or until the cranberries are popping.
2.5 tablespoons of minced onions (you could actually mince an onion or buy already minced/dried onion form the spice section of grocery)
2 tablespoons of minced celery
1 teaspoon of butter
1/3 cup of chicken broth
2 teaspoons of salt
1/4 teaspoon of poultry seasoning
1/3 teaspoon of garlic powder
a small dash of pepper
Steps to Make It:
Step 1: Mix the ingredients thoroughly in a large enough bowl
Step 2: When it is ready to microwave, place a damp paper towel over the bowl and microwave for 4-7 minutes. (If the stuffing is too wet or cold in the center, microwave for another minute or so.)
2 eggs, separated
1 can (13 oz.) evaporated milk (about 1 2/3 c.)
1 pkg. (4 1/2 oz.) egg custard mix
1 can (16 oz.) pumpkin
1/4 c. packed brown sugar
3/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/8 tsp. ground ginger
1/4 tsp. cream of tartar
1/4 c. granulated sugar
Steps to Make It:
Step 1: Use pastry mix for 1 crust pie. Prepare as directed on package.
Step 2: Roll between 2 pieces of wax paper.
Step 3: Place crust into microwavable pie plate.
Step 4: Prick bottom and side with fork.
Step 5: Microwave uncovered 2 minutes; turn dish 1/2 turn.
Step 6: Microwave 2-3 more minutes until crust has a dry, flaky appearance.
PART II: PUMPKIN FILLING:
Step 1: Separate 2 eggs. Keep egg whites in a separate dish.
Step 2: Beat egg yolks in 2 1/2 quart glass casserole dish.
Step 3: Add milk, egg custard, mix, pumpkin, brown sugar, and spices.
Step 4: Microwave uncovered to boiling (7-8 minutes). Stir every 2 minutes.
Step 5: Pour into pie shell
Step 6: Beat egg whites and cream of tartar until foamy in a separate bowl.
Step 7: Beat in sugar, 1 tablespoon at a time until stiff peaks form.
Step 8: Spread meringue around edge of pie.
Step 9: Microwave uncovered until meringue is set (1 1/2 minutes).
Step 10: Label and refrigerate at least 4 hours.
